However, this study aimed to extract and determine the fish oil extract from some frozen fish at Saudi Arabia by using spectral technique (GCMS, NMR and FTIR). On the other hand, esterification was necessary to study the GCMS spectra of fatty acids. According to theGCMS analysis results and camper it with 37 standard saturated and unsaturated fattyacid, the extracted showed that sardine was the richest fish of oil compared by otherchosen fish and that was compatible with previous studies. On the other hand, Hareedwas the lowest one in oil quantity but it is the richest of omega fatty acids. Theseresearch involved the chemical analysis to measure oil quality from three values: acidvalue to detects oxidative FAs and saponification value gives indicator to existhydrocarbon long chain. also, iodine value specified in unsaturation degree, since therange of these values for chosen fish were compatible with pervious studies. Moreover, the research includes synthesize a novel amide derivatives by used convention andultrasound methods to get a good yield and reduce the reaction time by react EPAmethyl ester with hydrazine hydrate and/or primary and secondary amines, it was alsoincluded a one pot reaction of EPA with amino acids methyl ester to prepared amidederivatives in a good yield. Characterized of all synthesized compounds were carried byFTIR ,1HNMR, 13CNMR, mass spectra and elemental analysis. The Thesis consists of four chapters as follows: Chapter one: this chapter included introduction, previous studies and review ofliterature, which consequently included introduction about lipids and fatty acid andclassification of FAs which divided into saturated and unsaturated FAs(monounsaturated and polyunsaturated) also according to ability of manufacture inhuman body. We concentrated on omega fatty acid omega-3, omega-6, omega-9. wherewe talked about sources, pharmaceutical, a biological activity, extraction anddetermination methods by used spectral technique and the chemical methods foranalysis. At the end of literature, we talked about reactions of fatty acids.-B Chaptertwo: included the experiments methods for extracted and determination offatty acids by chemical analysis and spectral technique also included the reactionsprocedures of it .Chapter three: included the results and discussion which can be divided as follows:- Extraction of FAs from fish samples.- Determination of main values (acid value, saponification value and iodinevalue).- A novel reaction of FAME with amines and FAs with amino acids methyl esterto give amide derivatives by using convention and ultrasound methods- Characterized of all synthesized compound were carried out by spectral analysis.Final included the references and appendixes.2 0
